Sugar Cookies (Gluten-free)

Ingredients
- 1 cup unsalted butter softened
- 1 cup sugar
- 1 egg
- 1/2 teaspoon almond extract
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 & 1/3 cup sweet rice flour
- 2/3 cup tapioca starch/flour
- 2/3 cup potato starch
- 1 1/2 teaspoon xanthan gum

Instructions
Dough Prep
- Cream butter and sugar
- Add egg and extracts. Mix.
- In a separate bowl, whisk all dry ingredients.
- Slowly add these to the butter mixture. Mix just until the dough comes together.
- Wrap in plastic and chill for at least an hour or overnight.
Rolling + Baking
- Preheat to 350F
- Remove about 1/4 of the dough from the fridge and roll it out on a surface lightly dusted with sweet rice flour.
- Cut shapes. Bake for 8-12 minutes - turn the sheets at the halfway mark for even cooking.
- Let cookies rest on sheet for at least 5 minutes before removing to a cooling rack.
